Dessert "Pizza" - Cinnamon Walnut Rollup with Salted Carmel
Pizza Dough Cinnamon Rolls
Stressed is desserts spelled backwards, and sometimes you need to take a deep breath, and make desserts. Or at least, that’s what we do when we need to relax.
What Can You Do With Leftover Pizza Dough?
This recipe is great if you have an Outdoor Pizzeria Pronto, PizzaQue, or Stovetop Pizzeria Pronto but will work on any pizza stone, or steel, or even a cookie sheet! It’s also perfect to complete a pizza dinner, especially if you have some leftover dough!
Salted Caramel
Ingredients
- 1 ¼ cups of sugar
- ½ cup of water
- 1 teaspoon of kosher salt
- 1 cup of cream
In a 3-quart saucepan combine sugar, water, and salt. Cook on high heat until the sugars start to caramelize. Once the mixture turns a light amber color (similar to honey) turn the heat off and slowly pour in the cream. Set heat back to medium low and stir until smooth. Continue to cook for 2 minutes and then transfer the mixture to a heatproof container.
Walnut Rollup
Ingredients
- 5oz portion of pizza dough
- 1/3 cup of toasted chopped walnuts
- 2 tablespoons of cinnamon sugar*
- 1 tablespoon of melted butter
- Salted caramel sauce
Instructions
Preheat your Pizzacraft pizza oven or stone according to directions. If using a conventional oven, pre-heat to 450°F. Using a dough roller, roll out the dough so that it becomes a 10” by 5” inch rectangle. Transfer the dough to a lightly flour dusted wood pizza peel. Brush the dough with the melted butter and evenly sprinkle the dough with toasted walnuts and cinnamon sugar. Roll the dough the short way, then transfer it to your Pizzacraft pizza oven, pizza stone, or baking sheet.
Remove the rollup from the oven when you start to see some browning on the outside (about 4 minutes in the Outdoor Pizzeria Pronto - longer in a conventional oven). If you would like, brush the hot rollup with remaining butter and add more cinnamon sugar. Use a bread knife to slice the Rolls into bite-size pieces and drizzle it with your salted caramel sauce.
* Cinnamon sugar can be bought at most supermarkets but it also can be easily made. All you have to do is combine 1 part ground cinnamon to 2 parts granulated sugar.
